Tatsuta Age
(Marinated Fried Chicken)
1 pound boned chicken
3 tablespoons Japanese soy sauce
2 tablespoons sake
2 teaspoons sugar
4 tablespoons cornstarch
lots of oil to deepfry
Cut chicken into bite sized squares and marinate in a mixture of soy. sake, and
sugar for at least 1 hour. Drain chicken; roll pieces in cornstarch and set
aside for 10 minutes.
Heat oil in a deep pan to 350ºF and fry chicken in small batches for about 2~3
minutes or until golden brown and crispy. Drain chicken and serve while still
hot. Taste like chicken! Serves 4.
